Before you can book: After-hours only — Tuesday to Friday after 8:30pm, weekends after 4:30pm, by advance reservation. Requires $1M liability insurance, ServSafe certification, a federal EIN letter, an NJ Certificate of Authority and Hamilton Township Health Department registration. No overnight use of the walk-in, freezer or dry storage, and no overnight parking.
A working cafe that rents its kitchen after trading hours and offers a commissary agreement for prep, clean-up and waste disposal at $350 a year. Kitchen time is $100 for up to four hours, then $25 an hour, on a $250 deposit. Useful for food trucks needing a commissary of record — but note there is no overnight storage or parking.
