Before you can book: Not a food-truck commissary — the operator states "We are not properly equipped to serve as a commissary for mobile units." Requires a Certified Food Service Manager on staff and present during use, Oakland County Health Division licensure, product liability insurance of $1M/$2M naming the studio as additional insured, and a $300 refundable deposit. Minimum 20 hours a month.
Commercially licensed shared kitchens in the Applegate Shopping Center, billed on a 20-hour monthly minimum at $480, with hourly rates falling from $25 to $21 peak (and $17 to $15 off-peak, midnight to 6am) as volume rises. Important: the operator states plainly it is not equipped to act as a commissary for mobile units, though you may prepare food here for sale from one.
